Step One
Ask an adult to help you preheat a fan-forced oven to 180C and line two baking trays with baking paper.

Step Two
Combine sifted flour, bicarbonate soda, ginger, cinnamon and cardamom together into a food processor bowl. Add Devondale Unsalted Butter and blend until the mix looks nice and crumbly. Mix in the sugar and stir it well.

Step Three
Add the egg and golden syrup together in a bowl and lightly whisk, before adding them to the food processor. Ask an adult for help using the food processor. Use the “pulse” function to make the mixture clump together.

Tip out the dough, knead until it feels smooth and then cover with cling wrap. Put it in the fridge for 15 minutes to cool down.

Scatter the extra flour on your rolling surface so that the mixture won’t stick. Roll the dough out to ½ cm thickness. Using gingerbread man cookie cutters, cut out the gingerbread men into shapes and place on the baking tray, leaving a gap between them. You can buy all kinds of different shaped cookie cutters from cooking stores so feel free to let your imagination go crazy!

Put in the oven to bake for 12-15 minutes, or until lightly golden-brown. After leaving them to sit for 10 minutes, place onto a wire rack to finish cooling before decorating.

To make the icing, place the egg white and lemon juice into a large, dry mixing bowl and beat until foamy then gradually add icing sugar and beat on low speed until combined, smooth and shiny. Turn to high and beat approximately 5 minutes till stiff and glossy. If you’d like coloured icing rather than white, add food colouring and mix well until the colour is even. Then, transfer the icing to a piping bag to pipe onto gingerbread men. TIP: If you don’t have piping bags pour icing into small plastic bags. Cut a small hole in the corner of the bag and use to pipe icing over gingerbread men.
