with Parsley Butter

In between the rush of homework, after school activities and prep for the next day, take the stress out of dinner with juicy minute steaks topped with parsley butter.

  • 400g frozen sweet potato fries
  • 3 tablespoons Devondale Salted Butter or Devondale Extra Soft at room temperature
  • 1 clove garlic, crushed
  • 1 tablespoon finely chopped parsley
  • Finely grated zest of one lemon
  • 4 x rump, sirloin or Scotch fillet steaks, approximately 150g each
  • 1⁄2 tablespoon olive oil
  • 2 bunches broccolini, trimmed

Step One

Place the sweet potato fries in a preheated oven and cook according to packet instructions.

Meanwhile, place the butter, garlic, parsley and lemon zest into a small bowl and mash with a fork until mixed well.

Create a minute steak by placing steak between 2 sheets of cling wrap and gently pounding until 1cm thick.

Step Four

Set a large frying pan over a medium high heat. Brush the steaks with oil, season with salt and pepper and cook for a minute on each side or until cooked to your liking. Set aside on a plate to rest for a few minutes. Steam or boil the broccolini until tender.

Place the butter onto the warm steaks. Serve with pre-cooked frozen sweet potato fries and steamed broccolini.
