Step Two
Divide the batter into 4 bowls. Use the food colouring to dye them different colours. We used blue, red, yellow and green, but you can use whatever combination you want. You can even use half and half on some pancakes or blend two colours (for example blue and red makes purple). Be careful though, if you add too many colours you’ll just end up with brown!

Step Three
Ask an adult for help with this part. Heat a large non-stick frying pan over a medium heat and spray with canola oil. Using a ¼ cup mixture per pancake, cook 2 pancakes for 2 to 3 minutes or until bubbles appear on surface. Turn and cook for 2 minutes. Transfer cooked pancakes to a plate, cover loosely with foil to keep them warm. If they don’t work out perfectly at first or if you burn one don’t worry - practice makes perfect. Repeat with remaining mixture, respraying with oil between batches to make sure they don’t stick to the pan which will make them burn.

Step Four
Stack one of each colour pancake on top of each other, creating 4 rainbow stacks each with one of each colour pancake. Each stack is 1 serve. Serve straight away with maple syrup. Dazzle friends and family with your beautiful creation!
